How To Make Habanero Pepper Corn Salad

A spicy and refreshing summer salad with grilled corn, habanero peppers, and fresh veggies.

Serves:

Ingredients

  • 3 ears of corn, grilled and kernels removed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 red onion, diced
  • 2 habanero peppers, seeded and diced
  • 1/4 cup of chopped cilantro
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Grill corn until lightly charred and kernels are crisp.

  2. Remove kernels from the cob and place in a bowl.

  3. Add diced bell peppers, red onion, habanero peppers and cilantro.

  4. Squeeze juice of 1 lime over the mixture and mix well.

  5. Season with salt and pepper to taste.

  6. Serve chilled.
