Ingredients

  • 2 chicken breasts, cooked and shredded
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 habanero peppers, seeded and minced
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1 can of black beans, drained and rinsed
  • 1/2 cup of corn kernels
  • 8-10 flour tortillas
  • 1 cup of salsa
  • 1 cup of shredded cheddar cheese
  • Sour cream and cilantro, for serving

Instructions

  1. Preheat the oven to 350°F.

  2. Heat the olive oil in a pan over medium heat, then add the onion, garlic and habanero peppers. Cook until softened.

  3. Add the spices and cook for another minute.

  4. Stir in the shredded chicken, beans, and corn.

  5. Place a scoop of the chicken mixture onto each tortilla and roll up. Place in a baking dish.

  6. Pour the salsa over the top of the enchiladas and sprinkle with shredded cheese.

  7. Bake for 25-30 minutes, until the cheese is melted and bubbly.

  8. Serve with sour cream and cilantro.
