How To Make Habanero Pepper Black Bean Soup

A spicy and hearty soup made with black beans, tomatoes, and habanero peppers.

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 habanero peppers, seeded and finely chopped
  • 2 cans black beans, rinsed and drained
  • 1 can diced tomatoes
  • 3 cups vegetable or chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, and sauté until fragrant, about 2 minutes.

  2. Add chopped habanero peppers and cook for an additional 2 minutes.

  3. Add black beans, diced tomatoes, vegetable or chicken broth, cumin, chili powder, salt, and pepper. Bring the soup to a boil, then reduce heat and let simmer for 20 minutes.

  4. Use an immersion blender or transfer soup to a blender to puree until smooth.

  5. Garnish with fresh cilantro and serve hot.
