Ingredients

  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 2 cups frozen peas
  • 1 head lettuce, washed and torn into bite-sized pieces
  • 1/4 cup fresh mint leaves, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large skillet, melt the butter over medium heat.

  2. Add the chopped onion and cook until softened, about 3-4 minutes.

  3. Stir in the frozen peas and cook for another 2-3 minutes.

  4. Add the torn lettuce leaves and chopped mint to the skillet. Cook for 1 minute, stirring occasionally.

  5. Season with salt and black pepper to taste.

  6. Reduce the heat to low, cover the skillet, and let the peas and lettuce braise for 5 minutes, or until they are tender.

  7. Remove from heat and serve hot as a side dish.
