- 2 heads of Little Gem lettuce, separated into leaves and washed
- 1 cup of frozen peas, thawed
- 1/2 cup of fresh mint leaves, torn
- 1/4 cup of crumbled feta cheese
- 1/4 cup of sliced almonds
- Juice of 1 lemon
- 2 tablespoons of extra virgin olive oil
- Salt and pepper to taste
Instructions

In a large bowl, combine the Little Gem lettuce leaves, peas, mint leaves, feta cheese, and sliced almonds.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
