Ingredients

  • 2 heads of Little Gem lettuce, separated into leaves and washed
  • 1 cup of frozen peas, thawed
  • 1/2 cup of fresh mint leaves, torn
  • 1/4 cup of crumbled feta cheese
  • 1/4 cup of sliced almonds
  • Juice of 1 lemon
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the Little Gem lettuce leaves, peas, mint leaves, feta cheese, and sliced almonds.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Drizzle the dressing over the salad and toss gently to combine.

  4. Serve immediately and enjoy!
