Ingredients

  • 2 heads of lettuce, rinsed and chopped
  • 2 cups of frozen peas
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 cup vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Add onion and garlic, sauté until fragrant.

  2. Add lettuce and peas, stir to combine. Cook for 2 minutes until lettuce starts to wilt.

  3. Pour in vegetable broth and season with salt and pepper. Bring to a simmer, cover, and cook for 15 minutes.

  4. Remove lid and cook for an additional 5 minutes, allowing excess liquid to evaporate.

  5. Serve hot and enjoy!
