Ingredients

  • 4 leeks, sliced
  • 2 cups frozen peas
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 tablespoon butter
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the leeks and garlic, and cook until softened, about 5 minutes.

  2. Stir in the frozen peas and vegetable broth. Bring to a simmer and cook for 10 minutes, until the peas are tender.

  3. Stir in the butter and season with salt and pepper.

  4. Garnish with fresh parsley before serving.
