Serves:

Ingredients

  • 4 medium sweet potatoes
  • 1 pound of flank steak, thinly sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 teaspoon of chili powder
  • 1 teaspoon of cumin
  • 1/2 teaspoon of paprika
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Scrub sweet potatoes clean and pierce them several times with a fork. Place them on a baking sheet and bake for 45 minutes or until tender.

  3. While sweet potatoes are baking, heat olive oil in a large skillet over medium-high heat.

  4. Add the sliced flank steak to the skillet and cook until browned, about 2-3 minutes per side.

  5. Add the bell pepper, onion, and minced garlic to the skillet with the steak. Cook until vegetables are tender, stirring occasionally.

  6. Sprinkle chili powder, cumin, paprika, salt, and pepper over the steak and vegetables. Stir to coat evenly.

  7. Once the sweet potatoes are done baking, remove them from the oven and let them cool slightly. Cut them in half lengthwise and use a fork to fluff the insides.

  8. Spoon the steak fajita filling generously over each sweet potato half.

  9. Garnish with fresh cilantro and serve hot.
