How To Make Crispy Chicken & Smashed Avocado Baps

Ingredients
- 4 chicken breasts
- 1 cup bread crumbs
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- 4 baps
- 2 avocados
- 1 lime
- 1/4 cup chopped cilantro
- 1/4 cup chopped red onion
- 1/2 cup cherry tomatoes, halved
Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a shallow bowl, mix together the bread crumbs, paprika, garlic powder, salt, and pepper.

Dip each chicken breast in beaten eggs, then coat with the bread crumb mixture. Place on the prepared baking sheet.

Bake in the preheated oven for 20 minutes or until the chicken is crispy and cooked through.

While the chicken is baking, prepare the smashed avocado. In a bowl, mash the avocados with lime juice, cilantro, red onion, salt, and pepper.

Slice the baps in half and lightly toast them.

Assemble the baps by spreading a generous amount of smashed avocado on the bottom half of each bap.

Place a crispy chicken breast on top of the avocado.

Add a few halved cherry tomatoes on top of the chicken.

Top with the other half of the bap and serve.
