How To Make Turkey Meatballs in Olive & Courgette Sauce

Ingredients
- 500g ground turkey
- 1 small courgette, grated
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 can (400g) diced tomatoes
- 1/4 cup sliced black olives
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
Instructions

In a large mixing bowl, combine the ground turkey, grated courgette, breadcrumbs, Parmesan cheese, parsley, salt, pepper, and minced garlic. Mix well until all ingredients are evenly incorporated.

Shape the mixture into 1-inch meatballs and set aside.

Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes.

Add the diced tomatoes, sliced black olives, dried oregano, dried basil, and red pepper flakes (if using) to the skillet. Stir well to combine.

Gently add the turkey meatballs to the skillet, making sure they are submerged in the sauce. Cover and simmer for 25-30 minutes, or until the meatballs are cooked through.

Serve the turkey meatballs with the olive and courgette sauce over cooked pasta or rice.
