Ingredients

  • 1 lb ground beef
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 fennel bulb, sliced
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 2 tbsp balsamic vinegar
  • 2 medium courgette, spiralized
  • Fresh basil leaves, for garnish

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, onion, garlic, oregano, salt, and black pepper. Mix well.

  2. Shape the mixture into meatballs, about 2 inches in diameter.

  3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove from the skillet and set aside.

  4. In the same skillet, add fennel slices and cook until softened, about 5 minutes.

  5. Add cannellini beans and balsamic vinegar to the skillet. Stir well to combine.

  6. Return the meatballs to the skillet and cook for another 10 minutes, until the meatballs are cooked through and the flavors have melded together.

  7. While the meatballs are cooking, spiralize the courgette into noodles.

  8. Serve the meatballs and fennel bean mixture over the courgette noodles. Garnish with fresh basil leaves.
