Ingredients

  • 500g ground turkey
  • 1 courgette, grated
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 lemon, cut into wedges for serving
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large bowl, combine the ground turkey, grated courgette, chopped onion, minced garlic, cumin, coriander, paprika, cayenne pepper, salt, and pepper. Mix well until all the ingredients are evenly combined.

  2. Shape the mixture into small oval-shaped koftas using your hands.

  3. Heat the olive oil in a non-stick skillet over medium heat.

  4. Place the koftas in the skillet and cook for about 15 minutes, turning occasionally, until they are browned and cooked through.

  5. Remove from heat and serve hot with lemon wedges for squeezing over the koftas.

  6. Garnish with freshly chopped parsley.

  7. Enjoy!
