Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup minced onion
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) tomato sauce
  • 1 tbsp tomato paste
  • 1 tsp fennel seeds
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, onion, garlic, oregano, salt, and black pepper. Mix well.

  3. Shape the mixture into meatballs, about 1 inch in diameter.

  4. Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides, then remove from the skillet and set aside.

  5. In the same skillet, add diced tomatoes, tomato sauce, tomato paste, and fennel seeds. Stir well to combine.

  6. Add the meatballs back to the skillet and bring the sauce to a simmer. Cover and cook for 20 minutes.

  7. Remove the lid and continue cooking for another 10 minutes, or until the meatballs are cooked through.

  8. Stir in fresh basil and parsley before serving.

  9. Serve the turkey meatballs with the tomato fennel sauce over pasta or rice.
