How To Make Bay & Bacon Roast Turkey

Ingredients
- 1 (12-pound) turkey
- 6 slices of bacon
- 2 bay leaves
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 cup chicken broth
Instructions

Preheat the oven to 325°F (165°C).

Place the turkey on a roasting rack in a large roasting pan.

Lay the bacon slices over the turkey breast, covering it entirely.

Tuck the bay leaves under the bacon.

Drizzle the olive oil over the turkey and season with salt and pepper.

Pour the chicken broth into the bottom of the roasting pan.

Roast the turkey in the preheated oven for about 3 hours, or until an internal temperature of 165°F (75°C) is reached.

Baste the turkey with the pan juices every 30 minutes.

Remove the bacon slices and bay leaves during the last 30 minutes of cooking to allow the skin to brown.

Transfer the roasted turkey onto a serving platter and let it rest for 15-20 minutes before carving.

Strain the pan juices and use it to make the make-ahead gravy.
