How To Make Eggplant Fajita Tacos

Enjoy your dose of veggies with these vegetarian fajita tacos. They’re filled with bell peppers, eggplants, spinach, and onion.

  • 1eggplant
  • 1red bell pepper
  • 1yellow bell pepper
  • 1green bell pepper
  • 1onion
  • vegetable oil,to taste
  • 1tbsptaco seasoning
  • salt,to taste
  • pepper,to taste
  • 1tbspred chile powder
  • 1cupbaby spinach
  • 1lime,plus more for serving
  • 1tbspbanana peppers,chopped
  • 4tortillas
  • 1sour cream


  1. Slice the eggplant, peppers and onion into juliennes.Pan fry the julienned eggplant in oil until it’s cooked and set aside.

  2. In a pan, fry the onions and peppers for 5 minutes.

  3. Add the taco seasoning, salt, pepper and red chili powder and fry until the vegetables are cooked.

  4. Add in the spinach and cooked eggplant. Cook for another 2 minutes.

  5. Finally add in the lime juice and banana peppers.

  6. Heat the tortillas on a pan

  7. Add the fajitas to the tortillas and add a dollop of sour cream.

  8. Top with some cracked pepper and lime juice.
