Ingredients

  • 2 bell peppers, thinly sliced
  • 1 red onion, thinly sliced
  • 2 zucchini, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • 1 tablespoon lime juice
  • Salt, to taste
  • 8 flour tortillas
  • Optional toppings: sour cream, salsa, guacamole

Instructions

  1. Preheat the grill or a skillet over medium heat.

  2. In a bowl, toss the bell peppers, red onion, and zucchini with olive oil, fajita seasoning, lime juice, and salt.

  3. Cook the vegetables on the grill or skillet for about 10-12 minutes, until they are tender and slightly charred, stirring occasionally.

  4. Warm the tortillas according to package instructions.

  5. Spoon the grilled vegetables onto each tortilla and fold it over to create a fajita.

  6. Serve hot with optional toppings like sour cream, salsa, and guacamole.
