How To Make Ruby Tuesday Chicken Fajitas Recipe

Ingredients

  • 1 lb. boneless skinless chicken breasts, sliced into thin strips
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tbsp. vegetable oil
  • 2 tbsp. fajita seasoning
  • Salt and pepper, to taste
  • Flour tortillas, for serving
  • Optional toppings: shredded cheese, sour cream, guacamole

Instructions

  1. In a large bowl, toss chicken strips with fajita seasoning until well coated.

  2. Heat the vegetable oil in a large skillet over medium-high heat.

  3. Add the chicken to the skillet and cook for 5-7 minutes or until chicken is cooked through.

  4. Remove chicken from skillet and set aside.

  5. In the same skillet, add the peppers and onions and cook for 5-7 minutes or until vegetables are tender.

  6. Return chicken to the skillet and stir until vegetables and chicken are combined and heated through.

  7. Serve with flour tortillas and optional toppings.
