Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, sliced
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt and pepper.

  2. Heat the vegetable oil in a large pot over medium-high heat. Add the chicken thighs, skin-side down, and cook until browned, about 4-5 minutes per side. Remove the chicken from the pot and set aside.

  3. In the same pot, add the onion, garlic, and ginger. Cook until fragrant, about 2-3 minutes.

  4. Add the bell peppers and carrots to the pot and cook for another 5 minutes.

  5. Return the chicken thighs to the pot and pour in the chicken broth, soy sauce, and oyster sauce. Bring to a boil, then reduce heat and let simmer for 30 minutes, or until the chicken is cooked through and tender.

  6. In a small bowl, mix the cornstarch and cold water until smooth. Gradually add the mixture to the pot, stirring constantly, until the sauce thickens.

  7. Serve the crystal chicken with steamed rice or noodles.
