How To Make One-pot Crystal Chicken Recipe

Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 tablespoon vegetable oil
- 1 onion, sliced
- 4 garlic cloves, minced
- 1 tablespoon ginger, grated
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, sliced
- 1 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 1 tablespoon cold water
- Salt and pepper to taste
Instructions

Season the chicken thighs with salt and pepper.

Heat the vegetable oil in a large pot over medium-high heat. Add the chicken thighs, skin-side down, and cook until browned, about 4-5 minutes per side. Remove the chicken from the pot and set aside.

In the same pot, add the onion, garlic, and ginger. Cook until fragrant, about 2-3 minutes.

Add the bell peppers and carrots to the pot and cook for another 5 minutes.

Return the chicken thighs to the pot and pour in the chicken broth, soy sauce, and oyster sauce. Bring to a boil, then reduce heat and let simmer for 30 minutes, or until the chicken is cooked through and tender.

In a small bowl, mix the cornstarch and cold water until smooth. Gradually add the mixture to the pot, stirring constantly, until the sauce thickens.
