How To Make Speedy Chorizo with Chickpeas

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 8 oz chorizo, sliced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and cook until the onion becomes translucent, about 5 minutes.

Add the sliced chorizo to the skillet and cook for another 5 minutes, until the chorizo starts to brown and release its oils.

Add the drained and rinsed chickpeas, diced tomatoes, smoked paprika, salt, and pepper to the skillet. Stir well to combine all the ingredients.

Reduce the heat to low and let the dish simmer for 10 minutes, allowing the flavors to meld together.

Serve hot, garnished with freshly chopped parsley.
