How To Make Chickpea, Chorizo & Spinach Stew

Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 chorizo sausage, sliced
- 1 can of diced tomatoes
- 2 cups vegetable broth
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1 can of chickpeas, drained and rinsed
- 3 cups fresh spinach
- Salt and pepper to taste
Instructions

Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened.

Add the chorizo sausage to the pot and cook until browned.

Stir in the diced tomatoes, vegetable broth, paprika, cumin, and chili powder. Bring to a simmer.

Add the chickpeas to the pot and continue to simmer for 15 minutes.

Stir in the fresh spinach and cook until wilted.

Season with salt and pepper to taste.
