How To Make Lamb with buckwheat noodles & tomato dressing

Ingredients
- 1 lb lamb, cut into small cubes
- 8 oz buckwheat noodles
- 2 tomatoes, diced
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp soy sauce
- Salt and pepper to taste
Instructions

Cook the buckwheat noodles according to package instructions. Drain and set aside.

Heat olive oil in a large skillet over medium-high heat. Add the lamb cubes and season with salt and pepper. Cook until browned and cooked through, about 5 minutes.

Remove the lamb from the skillet and set aside.

In the same skillet, add the minced garlic and diced tomatoes. Cook for 2-3 minutes, until the tomatoes start to soften.

Add the cooked buckwheat noodles to the skillet and toss to combine with the tomatoes and garlic.

Stir in the soy sauce and chopped basil. Cook for an additional 2 minutes, until everything is heated through.

Serve the lamb on top of the buckwheat noodles and drizzle with the tomato dressing.
