Ingredients

  • 1 cup buckwheat groats
  • 2 cups water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 small red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • Salt and freshly ground black pepper to taste

Instructions

  1. Rinse the buckwheat groats under running water and drain well.

  2. In a medium saucepan, bring the water to a boil and add the buckwheat groats. Reduce the heat, cover, and simmer for 15 minutes or until tender. Drain any excess water and let cool.

  3. In a large bowl, combine the cooled buckwheat groats with the cucumber, red bell pepper, red onion, parsley, and mint.

  4. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper.

  5. Pour the dressing over the salad and toss well to combine.

  6. Serve immediately or refrigerate until ready to serve.
