How To Make Easy Quinoa Stir-Fry

Ingredients
- 1 cup quinoa
- 2 cups water
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, thinly sliced
- 1 bell pepper, diced
- 1 cup broccoli florets
- 1 cup snap peas
- Salt and pepper to taste
- Optional toppings: chopped green onions, sesame seeds
Instructions

Rinse the quinoa thoroughly under cold water. In a saucepan, bring the water to a boil and add the quinoa. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the water is absorbed. Fluff with a fork and set aside.

In a small bowl, whisk together the soy sauce and sesame oil. Set aside.

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the onion and garlic and sauté until the onion is translucent.

Add the carrot, bell pepper, broccoli, and snap peas to the skillet and stir-fry for 5-7 minutes, or until the vegetables are crisp-tender.

Stir in the cooked quinoa and the soy sauce mixture. Cook for an additional 2-3 minutes, or until heated through.

Season with salt and pepper to taste.

Serve hot, garnished with chopped green onions and sesame seeds if desired.
