Ingredients

  • 8 oz firm tofu, drained and cubed
  • 2 cucumbers, spiralized
  • 8 oz rice noodles, cooked according to package instructions
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 2 green onions, sliced
  • 1/4 cup chopped peanuts
  • Sesame seeds, for garnish

Instructions

  1. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, ginger, and garlic to make the sauce.

  2. In a large skillet, heat some oil over medium-high heat. Add tofu and cook until browned and crispy, about 5-7 minutes. Remove from skillet and set aside.

  3. In the same skillet, add the cucumber noodles and cook for 1-2 minutes until slightly softened.

  4. Add the cooked rice noodles to the skillet along with the sauce. Toss to coat the noodles and cucumber.

  5. Remove from heat and sprinkle with green onions, chopped peanuts, and sesame seeds.

  6. Serve the Asian-style tofu & cucumber noodles warm and enjoy!
