Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • salt and pepper, to taste
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese, for serving
  • optional: sour cream, chopped green onions, tortilla chips for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat until cooked through. Drain excess fat.

  2. Add the diced onion and minced garlic to the pot and cook until onion is translucent.

  3. Stir in the diced tomatoes, kidney beans, chili powder, cumin, paprika, salt, and pepper. Cook for 5 minutes.

  4. Pour in the beef broth and bring to a boil. Reduce heat and simmer for 10 minutes.

  5. Serve hot with shredded cheese and optional garnishes.
