How To Make Turkish Saffron & Goji Berry Pilaf

Ingredients
- 2 cups basmati rice
- 3 cups vegetable broth
- 1 teaspoon saffron threads
- 1/4 cup goji berries
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- Salt, to taste
- Freshly ground black pepper, to taste
- Chopped fresh parsley, for garnish
Instructions

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 15 minutes, then drain.

In a small bowl, steep the saffron threads in 2 tablespoons of hot water for 10 minutes.

Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté until golden brown.

Add the soaked and drained basmati rice to the pot, along with the goji berries, saffron water, ground cumin, and ground coriander. Stir well to combine.

Pour in the vegetable broth and season with salt and freshly ground black pepper to taste. Bring to a boil, then reduce heat to low. Cover and let simmer for 15-18 minutes, or until the rice is cooked and fluffy.

Remove from heat and let the pilaf stand, covered, for 5 minutes. Fluff the rice with a fork and garnish with chopped fresh parsley before serving.
