  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) black beans, drained and rinsed
  • 2 cups chicken broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. In a large pot or Dutch oven, heat some olive oil over medium heat. Add the ground turkey and cook until browned.

  2. Add the diced onion, minced garlic, and diced bell pepper. Cook for a few more minutes until the vegetables are softened.

  3. Stir in the diced tomatoes, kidney beans, black beans, chicken broth, chili powder, cumin, paprika, salt, and pepper.

  4. Bring the mixture to a simmer and let it cook for about 30 minutes, stirring occasionally.

  5. Taste and adjust seasonings if needed.

  6. Serve hot with your choice of toppings.
