How To Make Microwave Bacon & Bean Casserole

Ingredients

  • 6 slices of bacon, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cans (15.5 oz each) of white beans, drained and rinsed
  • 1 cup of chicken broth
  • 1 tsp of dried thyme
  • Salt and pepper, to taste
  • 1 cup of shredded cheddar cheese

Instructions

  1. In a microwave-safe casserole dish, cook the bacon on high for 5 minutes or until crispy. Remove and drain on paper towels.

  2. In the same dish, add the onion and garlic. Microwave on high for 2 minutes or until softened.

  3. Stir in the beans, chicken broth, thyme, salt, and pepper. Microwave on high for 8 minutes or until heated through.

  4. Remove the dish from the microwave and sprinkle the cooked bacon and shredded cheese on top.

  5. Microwave on high for 2 minutes or until the cheese is melted and bubbly.

  6. Let the casserole cool for a few minutes before serving.
