How To Make Lamb Kofta Stew with Cauliflower & Chickpeas

Ingredients
- 500g ground lamb
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground paprika
- 1 tsp ground turmeric
- 1/2 tsp ground cinnamon
- 1/2 tsp cayenne pepper (optional, for heat)
- 1 small cauliflower, cut into florets
- 1 can of chickpeas, drained and rinsed
- 1 can of diced tomatoes
- 2 cups of chicken or vegetable broth
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

In a large bowl, combine the ground lamb, onion, garlic, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper (if using), salt, and pepper. Mix well until all the ingredients are evenly distributed.

Shape the lamb mixture into small meatballs (kofta) and set aside.

Heat a large pot or Dutch oven over medium heat. Add a drizzle of oil and cook the lamb kofta until browned on all sides. Remove the kofta from the pot and set aside.

In the same pot, add the cauliflower florets and sauté for a few minutes until slightly golden.

Add the diced tomatoes, chickpeas, and broth to the pot. Stir well to combine.

Bring the mixture to a simmer and add the lamb kofta back into the pot. Cover and let it cook for about 45 minutes to 1 hour, or until the lamb is cooked through and the cauliflower is tender.

Season with additional salt and pepper if needed.

Serve the lamb kofta stew hot, garnished with fresh cilantro.
