How To Make Kyle’s Favorite Beef Stew

Ingredients
- 1.5 lbs beef stew meat, cut into cubes
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, peeled and chopped
- 2 potatoes, peeled and cubed
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
Instructions

In a large pot, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown on all sides. Remove the meat from the pot and set aside.

In the same pot, add the chopped onion and minced garlic. Saute until the onion is translucent and fragrant.

Add the carrots, potatoes, and celery to the pot and saute for a few minutes.

Return the beef to the pot and pour in the beef broth and red wine. Stir in the tomato paste, dried thyme, and dried rosemary.

Bring the stew to a boil, then reduce heat to low and cover. Simmer for about 2 hours, or until the beef is tender.

Season with salt and pepper, to taste. Serve hot.
