Ingredients
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) tomato sauce
- 2 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp oregano
- 1/4 tsp cayenne pepper (optional)
- Salt and pepper, to taste
- Shredded cheese, for topping
- Sour cream, for topping
- Chopped green onions, for topping
Instructions

In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.

Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook for 5 minutes until vegetables are softened.

Stir in the diced tomatoes, kidney beans, and tomato sauce.

Add the chili powder, cumin, paprika, oregano, cayenne pepper (if desired), salt, and pepper. Stir until well combined.

Reduce heat to low and let the chili simmer for at least 1.5 – 2 hours, stirring occasionally to prevent sticking and to allow flavors to meld together.

Serve the chili hot, topped with shredded cheese, sour cream, and chopped green onions.
