Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.

  2. In a large mixing bowl, cream together butter and sugar until light and fluffy.

  3. Beat in eggs one at a time.

  4. Add vanilla extract, bananas, and milk. Mix until well combined.

  5. In a separate mixing bowl, whisk together salt, baking powder, and flour. Add mixture to the wet ingredients, mixing just until combined.

  6. Pour batter into prepared loaf pan, spreading evenly.

  7. Bake for 60 minutes or until a toothpick inserted into the center of the loaf comes out clean.

  8. Cool completely on wire rack before slicing and serving.
