How To Make Beef and Vegetable Stew

Ingredients
- 1.5 pounds beef stew meat, cut into cubes
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 potatoes, peeled and cubed
- 1 cup green beans, trimmed and cut into bite-sized pieces
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions

Heat some oil in a large pot over medium heat. Add the beef cubes and cook until browned on all sides. Remove from the pot and set aside.

In the same pot, add the onion and garlic. Sauté until the onion is translucent.

Add the carrots, potatoes, and green beans to the pot. Stir for a few minutes until slightly softened.

Return the beef cubes to the pot. Add the beef broth, tomato paste, bay leaf, and dried thyme. Stir well to combine.

Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 1.5 to 2 hours until the beef is tender.
