Ingredients

  • 1 lb ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, bread crumbs, Parmesan cheese, parsley, onion, and garlic. Shape mixture into 1-inch meatballs.

  2. Heat a large pot over medium heat. Add meatballs and cook until browned on all sides, about 5 minutes. Remove meatballs from pot and set aside.

  3. In the same pot, add diced tomatoes, beef broth, dried basil, dried oregano, and salt and pepper. Bring to a boil, then reduce heat to low and simmer for 10 minutes.

  4. Return meatballs to the pot and continue to simmer for another 15 minutes, until meatballs are cooked through and stew has thickened slightly.

  5. Serve hot and garnish with additional parsley, if desired.
