How To Make Lunchbox Pasta Salad

Ingredients

  • 8 oz pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper, to taste

Instructions

  1. Cook pasta according to package instructions. Drain and rinse with cold water.

  2. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, feta cheese, and fresh basil.

  3. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper. Pour over the pasta salad and toss well to coat.

  4. Cover and refrigerate for at least 1 hour before serving.

  5. Pack the pasta salad in lunchboxes and enjoy!
