  • 4 cups of potatoes, peeled and diced
  • 2 cups of broccoli florets
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of shredded cheddar cheese
  • 1 cup of milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.

  2. Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for 15 minutes, or until the potatoes are tender.

  3. Add the broccoli florets and cook for an additional 5 minutes, until the broccoli is cooked but still slightly crisp.

  4. Using an immersion blender or a regular blender, blend the soup until smooth.

  5. Return the soup to the pot and stir in the shredded cheddar cheese and milk. Cook over low heat until the cheese is melted and the soup is heated through.

  6. Season with salt and pepper to taste.

  7. Serve hot and enjoy!
