Ingredients
- 1 opo squash, peeled and sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, chopped
- 4 cups vegetable broth
- 1 tsp turmeric powder
- 1 tsp cumin powder
- Salt and pepper to taste
- Fresh cilantro, for garnish

In a large pot, heat some oil and sauté the onion and garlic until fragrant.

Add the opo squash, carrot, and celery. Cook for a few minutes until the vegetables start to soften.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15-20 minutes until the squash is tender.

Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches.
