- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 jalapeno pepper, seeded and diced
- 1 red bell pepper, seeded and diced
- 1 tsp cumin
- 1 tsp chili powder
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 2 cups chicken broth
- 2 cups shredded chicken
- Juice of 1 lime
- Salt and pepper to taste

In a large pot, heat the olive oil over medium heat. Add the onion, garlic, jalapeno, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.

Stir in the cumin and chili powder and cook for an additional minute.

Add the black beans, pinto beans, diced tomatoes (with their juice), and chicken broth to the pot. Bring to a simmer and cook for 15 minutes.

Using an immersion blender or a regular blender, blend half of the soup until smooth. Return the blended soup to the pot.

Stir in the shredded chicken and cook for an additional 5 minutes, until heated through.

Stir in the lime juice and season with salt and pepper to taste.
