How To Make Spiced Black Bean & Chicken Soup with Kale

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional for extra heat)
- 2 cups cooked black beans
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 2 cups kale, chopped
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sauté until softened.

Stir in the cumin, chili powder, paprika, and cayenne pepper. Cook for a minute until fragrant.

Add the black beans, chicken, and chicken broth to the pot. Bring to a boil and then reduce heat and let simmer for 20 minutes.

Stir in the kale and cook for an additional 5 minutes until wilted.

Season with salt and pepper to taste and squeeze in the lime juice.

Ladle the soup into bowls and garnish with fresh cilantro. Serve hot.
