Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional for extra heat)
  • 2 cups cooked black beans
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sauté until softened.

  2. Stir in the cumin, chili powder, paprika, and cayenne pepper. Cook for a minute until fragrant.

  3. Add the black beans, chicken, and chicken broth to the pot. Bring to a boil and then reduce heat and let simmer for 20 minutes.

  4. Stir in the kale and cook for an additional 5 minutes until wilted.

  5. Season with salt and pepper to taste and squeeze in the lime juice.

  6. Ladle the soup into bowls and garnish with fresh cilantro. Serve hot.
