- 2 pounds chicken bones
- 1 onion, sliced
- 2 inches of ginger, sliced
- 2 cinnamon sticks
- 4 star anise
- 4 cloves
- 1 tablespoon coriander seeds
- 4 cups chicken broth
- 8 cups water
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- 8 ounces rice noodles
- 1 cup bean sprouts
- 1 lime, cut into wedges
- Fresh herbs (such as cilantro, Thai basil, and mint) for garnish
Instructions

In a large pot, char the onion and ginger over an open flame or under the broiler until fragrant and slightly blackened.

Add the chicken bones, cinnamon sticks, star anise, cloves, and coriander seeds to the pot. Toast them for a few minutes until fragrant.

Pour in the chicken broth and water. Bring to a boil, then reduce heat and simmer for 1 hour.

Remove the chicken bones and spices from the broth using a strainer or slotted spoon.

Add fish sauce and sugar to the broth, adjusting to taste.
