  • 6 cups beef broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 cup dried pasta (such as ditalini or small shells)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, garlic, Parmesan cheese, parsley, salt, and black pepper. Mix until well combined.

  2. Shape the mixture into small meatballs, about 1 inch in diameter.

  3. In a large pot, heat the beef broth over medium heat. Add the carrots, celery, and onion, and bring to a simmer.

  4. Carefully drop the meatballs into the simmering broth. Cook for about 10 minutes, or until meatballs are cooked through.

  5. Add the dried pasta to the pot and cook according to package instructions, until al dente.

  6. Serve hot, garnished with additional parsley if desired.
