Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup heavy cream
  • Fresh basil leaves, for garnish

Instructions

  1. Select the sauté function on the Instant Pot® and heat the olive oil.

  2. Add the onion and garlic, and sauté until the onion is translucent.

  3. Press cancel to turn off the sauté function.

  4. Add the crushed tomatoes, chicken broth, dried basil, dried oregano, salt, and black pepper to the pot.

  5. Secure the lid and set the vent to sealing.

  6. Select the manual pressure cook setting and set the cooking time for 5 minutes on high pressure.

  7. Once the cooking time is complete, allow for a natural pressure release for 5 minutes, then quick release any remaining pressure.

  8. Remove the lid and use an immersion blender to puree the soup until smooth.

  9. Stir in the heavy cream.

  10. Serve the soup hot, garnished with fresh basil leaves.
