Ingredients

  • 1.5 pounds frozen beef stew meat
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 3 potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • salt and pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Set Instant Pot to “Saute” mode and add olive oil. Once hot, add the frozen beef stew meat and cook until browned on all sides.

  2. Add the diced onion, carrots, potatoes, and garlic to the Instant Pot. Stir for 2-3 minutes until vegetables are slightly softened.

  3. Cancel the “Saute” mode and add beef broth, diced tomatoes, tomato paste, dried thyme, and dried rosemary. Season with salt and pepper to taste.

  4. Close the Instant Pot lid and set the valve to “Sealing” position. Select the “Pressure Cook” or “Manual” setting and adjust the time to 45 minutes on high pressure.

  5. Once the cooking time is complete, allow for a natural release or perform a quick release by carefully turning the valve to “Venting”.

  6. Open the Instant Pot lid and give the stew a good stir. Taste and adjust the seasoning if needed.

  7. Serve the Instant Pot stew hot and enjoy!
