How To Make Instant Pot Tomato Soup Recipe

Creamy and savory tomato soup made in an instant pot.

Serves:

Ingredients

  • 2 tbsp unsalted butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup tomato paste
  • 4 cups chicken or vegetable broth
  • 2 (14.5 oz) cans diced tomatoes, undrained
  • 1/4 cup heavy cream
  • Salt and black pepper, to taste

Instructions

  1. Turn on sauté mode in instant pot and melt butter.

  2. Add onion and garlic and sauté for 2–3 minutes.

  3. Add tomato paste and cook for additional 1–2 minutes.

  4. Add broth and undrained tomatoes and stir.

  5. Lock the lid onto the instant pot and set the valve to sealing.

  6. Set manual pressure to cook for 10 minutes.

  7. Quick release pressure once cooking is done.

  8. Add heavy cream and stir.

  9. Blend the soup with an immersion blender until smooth.

  10. Season with salt and black pepper to taste.

  11. Serve hot and enjoy!
