Ingredients
- 1 lb dried white beans, soaked overnight and drained
- 1 lb ham, diced
- 1 onion, chopped
- 3 carrots, diced
- 3 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Turn on the Instant Pot and select the “Saute” function. Heat some oil and saute the onion, carrots, celery, and garlic until softened.

Add the ham to the pot and cook for another 2 minutes, until lightly browned.

Add the soaked beans, broth, bay leaf, thyme, salt, and pepper to the pot. Stir everything together.

Close the lid of the Instant Pot and set the vent to the sealing position.

Select the “Soup” function and adjust the time to 45 minutes.

Once the cooking time is done, allow for a natural pressure release for 10 minutes. Then, carefully perform a quick release to release any remaining pressure.

Open the lid and remove the bay leaf. Give the soup a good stir.

Ladle the soup into bowls and garnish with fresh parsley.
