How To Make Homemade Chicken Soup

Serves:
Ingredients
- 1 whole chicken (about 3lbs)
- 10 cups of water
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions

Place the whole chicken in a large pot and add 10 cups of water. Bring to a boil and reduce the heat to a simmer.

Skim off any foam that rises to the surface. Add the chopped onion, diced carrots, diced celery, minced garlic, bay leaf, and dried thyme.

Cover and simmer for 1 hour and 30 minutes or until the chicken is cooked through and the vegetables are tender.

Remove the chicken from the pot and let it cool slightly. Remove the chicken meat from the bones and shred it into bite-size pieces.

Discard the bones and return the chicken meat to the pot. Season with salt and pepper to taste.

Garnish with fresh parsley and serve hot.
