How To Make Thai Green Prawn Curry

Ingredients
- 500g prawns, peeled and deveined
- 2 tbsp Thai green curry paste
- 400ml coconut milk
- 1 cup chicken or vegetable broth
- 1 tbsp fish sauce
- 1 tbsp palm sugar or brown sugar
- 1 cup bamboo shoots
- 1 cup green beans, trimmed and cut into 2-inch pieces
- 1 red bell pepper, thinly sliced
- Fresh basil leaves, for garnish
- Cooked rice, to serve
Instructions

Heat a large saucepan or wok over medium heat. Add the green curry paste and cook for 1-2 minutes until fragrant.

Add half of the coconut milk and stir until the curry paste is well combined.

Add the remaining coconut milk, broth, fish sauce, and palm sugar. Bring to a simmer.

Add the prawns, bamboo shoots, green beans, and red bell pepper. Cook for 5-7 minutes until the prawns are cooked through and the vegetables are tender.

Remove from heat and garnish with fresh basil leaves.

Serve the Thai green prawn curry over cooked rice.
