How To Make Coconut Fish Curry

Ingredients
- 1 lb firm white fish fillets, cut into chunks
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp ginger, grated
- 1 tsp curry powder
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 can (14 oz) coconut milk
- 1 cup water
- 1 tomato, diced
- 1 green chili, sliced (optional)
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

Heat oil in a large pan over medium heat. Add onions, garlic, and ginger. Cook until onions are translucent.

Add curry powder, turmeric powder, and cumin powder. Stir well to coat the onions.

Add the coconut milk and water. Bring to a simmer.

Add the fish chunks, tomato, and green chili (if using). Season with salt. Cover and simmer for about 15 minutes or until the fish is cooked through.

Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
