Ingredients

  • 4 fish fillets (such as salmon or cod)
  • 2 tablespoons curry powder
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 thumb-sized ginger, grated
  • 1 red chili, deseeded and chopped
  • 1 can coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon vegetable oil
  • Salt, to taste
  • Cooked rice, for serving
  • Fresh cilantro, for garnish

Instructions

  1. In a large pan, heat the vegetable oil over medium heat. Add the onion, garlic, ginger, and red chili. Sauté until fragrant and the onion is translucent.

  2. Add the curry powder and stir for about a minute to release its flavors.

  3. Pour in the coconut milk and fish sauce. Stir well to combine.

  4. Gently place the fish fillets into the curry sauce. Cover the pan and let it simmer for about 15 minutes, or until the fish is cooked through and flakes easily with a fork.

  5. Season with salt to taste.

  6. Serve the curry fish over cooked rice. Garnish with fresh cilantro.
