How To Make Sweet Potato Soup

A warm and comforting soup with the sweetness of sweet potatoes.

Ingredients

  • 2 large sweet potatoes, peeled and chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups of vegetable broth
  • 1 cup of milk
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until fragrant.

  2. Add sweet potatoes and season with salt and pepper. Sauté for 5-7 minutes.

  3. Pour in vegetable broth and bring to boil. Reduce heat to low and simmer for 15-20 minutes, or until sweet potatoes are tender.

  4. Puree the soup using an immersion blender or traditional blender.

  5. Stir in milk and heat until soup is warmed through.

  6. Serve hot, garnished with chopped parsley or chives.
